The season of the salad has now arrived, but often the thought of your standard lettuce, tomatoes and onions doesn’t exactly get the taste buds going. So how can we improve the salad experience this summer? Well, as with many of life’s problems, the solution is cheese. Yes, cheese. Although this does tarnish their healthy image somewhat, a salad is made infinitely better by its inclusion, but there one cheese that reigns supreme in this setting – that Mediterranean favourite, feta. Feta, Pea and Rocket Salad
The only bit of effort involved in the preparation of this one is heating and cooling your peas, and let’s face it, that not exactly strenuous or time consuming. You will need…
- 1 packet of Feta cheese, diced or crumbled
- 1 packet of rocket-based pre-prepared salad
- 100g frozen or fresh peas (prepare accordingly)
- 2 tablespoons of olive oil
- 1 teaspoon fresh lemon juice (or just a squeeze from half a lemon)
- Salt and pepper
Just place the feta, peas and salad leaves in a bowl, mix the olive oil, lemon juice and seasoning together and pour over. Toss to make sure everything is covered and serve as a side or as a light lunch on its own.
Puy Lentil, Sundried Tomato and Feta Salad
I may not contain any leaves, but this is still very much in salad territory and is the easiest one to prepare from our three recipes. You will need…
- 1 tin of pre-cooked puy lentils, rinsed and drained
- Half a jar of sundried tomatoes, drained and sliced or diced
- 1 packet of Feta cheese, diced or crumbled
Just toss together all of the above – you don’t need any dressing because the tomatoes will come ready with their own oil. This makes a good side for a barbecue, offering something a little bit different to the usual potato salad and coleslaw.
Classic Greek Salad
We couldn’t put together a post on Feta cheese salads without mentioning the daddy of all the Feta cheese salads, and if you haven’t had Greek Salad in a while, then take this opportunity to remind yourself how delicious and versatile it is. You will need…
- 1 packet of Feta cheese, diced or crumbled
- Half a cucumber, diced into large chunks
- 3-4 vine tomatoes (get as good a quality as you can find), quartered
- Half a jar of good quality black olives, drained
- Half a red onion, finely sliced
- 1-2 tablespoons of good quality olive oil (preferably Greek)
Toss all of the above together and serve – you won’t need any additional seasoning because the Feta and the olives provide enough saltiness on their own. You can dish up Greek Salad as a side with barbeque meats, steak and chips, or with a roast chicken for an alternative summery Sunday dinner. Or just enjoy on its own for lunch as it makes a great treat in itself.
